I don’t know about you but my mama loves πŸ’• Lemon Desserts 🍨 and Limoncello 🍾πŸ₯‚πŸ‹ πŸ˜‰ So I decided to make this super refreshing, tart but sweet Lemon bar recipe for Mother’s Day!! 😍😍😍

Unlike traditional lemon bars I added a bit of a lime twist πŸ˜‹ and kept these bars sugar free, refined flour free plus gluten free too!! πŸ’ƒπŸ½πŸ’«And let me tel you this lemon cookie crust is AMAZING πŸ€€πŸ’–πŸ¦„βœ¨πŸŽ‰

Plus they have protein, fiber and healthy fats! πŸ₯₯🌴 I’m sure any mama would love πŸ’— this surprise for Mother’s Day! πŸŒΊπŸ’πŸŒΈ

Lemon πŸ‹ Lime Keto Bars 🌟🌟🌟

  • Ingredients:
  • Lemon Cookie crust:
  • 2 cups bobsredmill almond flour
  • 1 scoop vanilla protein powder
  • 1/3 cup swerve granular sweetener
  • 1/4 tsp Himalayan sea salt
  • 1/4 cup melted coconut oil
  • 2 large eggs whisked
  • 1/2 tsp lemon extract πŸ‹

Lemon filling:

  • 1 scoop vanilla protein powder
  • 3 tbsp. Swerve granular sweetener
  • 1/4 cup bobsredmills almond flour
  • 4 large Eggs
  • 3/4 cup Lemon and lime juice
  • 1 tbsp Lemon zest
  • 1 tbsp Lime zest
  • 1 tsp. Lemon extract
  • 1/4 cup silk unsweetened almond milk

Directions:

1. Preheat oven to 350 degrees Fahrenheit.

2. Make lemon cookie crust. Add protein powder, sweetener,

salt, almond flour and lemon zest in a bowl and whisk.

3. Mix melted coconut oil with eggs and lemon extract.

4. Add to dry ingredients then press into 10 x 10” greased baking dish and bake for 13min.

5. For filling Mix eggs, zest, Lemon πŸ‹ and lime juice plus almond milk until smooth.

6. Add sweetener, protein powder and almond flour until Smooth.

7. Add filling to crust immediately out of the oven and bake for 15-20min until set in the middle.

8. Wait until completely cooked then Top with more zest and powdered swerve sweetener then enjoy! 😍
