Pumpkin Spice Chocolate Chip Cookies! (Gluten free, Dairy free, High Protein Cookies)

Ok so I admit this Fall has meant a ton of pumpkin spice recipes coming from yours truly (check out my instagram @svelte_philosophy for more!) but can you blame me? Pumpkin is one of my favorite squashes! It’s super versatile meaning it can be savory or sweet, it packed with nutrients such as potassium, vitamin A, vitamin C, fiber, vitamin E and B vitamins. Plus it’s lower in carbohydrates than sweet potatoes but still can add moisture to desserts or baked goods! 

Also since I adore chocolate I decided to add some to these delicious cookies! These cookies are so easy to make, moist and almost cake like! Needless to say they didn’t last long in my house! 


Pumpkin Spice Chocolate Chip Cookies 🍪 

Ingredients: 

  • – 2/3 cup pumpkin purée 
  • – 1/2 cup almond flour
  • – 1/2 cup coconut sugar
  • – 1 scoop vanilla protein powder 
  • – 1 tbsp. Maple syrup
  • – 1/2 cup smooth peanut butter
  • – 1 egg
  • – 1/2 tsp baking soda
  • – 1/4 tsp sea salt
  • – 1/2 cup enjoylife mini chocolate chips

Directions:

Mix all ingredients and bake at 350 degrees for 12min. Cookies will be soft so be careful! 
Makes 14 cookies! Enjoy! 😎✌🏼
